Red cabbage and apple wraps with Gorgonzola and walnuts

Ingredients for 4 servings:

  • 4 wraps
  • 250 g Gorgonzola (Dolcelatte)
  • 800 g red cabbage
  • 300 g apples, sour
  • 80 g walnut kernels, coarsely chopped
  • 4 tbsp sugar
  • 4 tbsp olive oil
  • ½ lemon(s)
  • salt and pepper

For the filling, finely slice the red cabbage. Peel the apples, cut them into wedges, and remove the cores. Cut the apple slices into small pieces. Squeeze the lemon juice. Briefly fry the red cabbage in a pan with olive oil and sugar over high heat, stirring frequently. Add the apple slices and lemon juice, and season the cabbage with salt and pepper. Cook uncovered over medium heat for 30 minutes, stirring frequently. Add the walnuts and simmer the filling for another 10 minutes with the lid closed over low heat. Cut the Gorgonzola into strips and arrange the Gorgonzola pieces evenly over the entire surface of the wraps. Spread the still-warm red cabbage filling over the wraps, covering half the surface, leaving the other half free. Fold the wraps in half or in half, depending on your preference, and fry in the pan over medium heat with a little olive oil until browned on both sides. You can serve the wraps traditionally on a plate or to go in a buttered paper bag. They go well with various sauces, such as sweet chili sauce, curry sauce, or Chicken McNuggets sauce.
