Onion rings and broccoli in beer batter

Ingredients for 2 servings:

  • 200 g broccoli
  • 1 vegetable onion(s)
  • 2 eggs, organic
  • 250 g flour
  • 125 ml milk, 3.5%
  • 125 ml beer, light, not wheat beer
  • 2 tsp baking powder
  • 400 ml rapeseed oil, for frying

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

In a mixing bowl, combine the flour and baking powder, add the eggs, milk, and beer, and whisk vigorously. Divide the broccoli into small florets, cut a cross into the stalks, and briefly blanch the vegetables in boiling salted water until al dente. Remove and dry on kitchen paper. Peel the onion and cut into approximately 0.5 cm thick rings, using only the outer (large) rings. Heat a small saucepan with the rapeseed oil (or other frying fat) to approximately 140°C. Toss the vegetables in the batter and add them to the pan. They should float in the boiling fat. When the vegetables are golden brown, remove them with a slotted spoon. Season with salt and pepper to taste.
