Ingredients for 4 servings:

  • 500 g zucchini
  • 80 g breadcrumbs
  • 1 tsp oregano
  • 1 garlic clove(s)
  • 1 tsp salt
  • 1 pinch(s) of pepper
  • 8 tbsp extra virgin olive oil, cold squeezed

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Zucchini sabbiose. As a side dish or antipasto.

Cut 500g of zucchini into approximately 6mm thick slices and brush thoroughly with olive oil on both sides. Finely chop 1 garlic clove. Place 80g breadcrumbs, 1 teaspoon of oregano, garlic, 1 teaspoon of salt, and a pinch of pepper in a bowl and mix thoroughly. Spread 3 tablespoons of olive oil as evenly as possible in a pan and heat over medium heat. Add one zucchini slice to the breadcrumb mixture on each side, thoroughly coating, and spread in the pan. Cover and fry over medium heat for 10 minutes, then turn over and fry for another 10 minutes until the zucchini is golden brown. Serve immediately warm as a side dish. Can also be served lukewarm as an antipasto. Variation: Lightly oil a baking tray, spread the zucchini on it and bake in the oven at 180 °C (fan oven) until the zucchini are golden brown, then turn and continue baking.
