Winter Fruit Salad

Ingredients for 12 servings:

  • ½ cup sugar
  • ½ cup lemon juice
  • 2 tsp onion(s), diced
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • 1 cup oil, light
  • 1 tsp poppy seeds
  • 1 bag of mixed salad
  • 4 tsp cheese, grated
  • 1 cup cashew nuts
  • ¼ cup cranberries, dried
  • 1 apple, peeled, sliced
  • 1 pear(s), peeled, sliced

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Combine the sugar, lemon juice, onion, mustard, and salt in a blender and blend until smooth. Add the oil while blending until the mixture is thick and creamy. Finally, add the poppy seeds and blend again. In a large bowl, combine the lettuce, cheese, nuts, cranberries, apple, and pear. Just before serving, drizzle the dressing over the salad and mix well.
