Cucumber and kiwi salad

Ingredients for 2 servings:

  • ½ cucumber(s)
  • 1 avocado(s)
  • 2 kiwis
  • ½ onion(s)
  • 3 tbsp lemon juice
  • 3 tbsp olive oil
  • 1 tsp salt
  • pepper
  • 1 tsp honey, liquid and tasteless, alternatively Habernero honey
  • 3 stalks of parsley or chives

Instructions

Working time approx. 25 minutes; Rest time approx. 30 minutes; Total time approx. 55 minutes

Wash the cucumber, peel if necessary, halve lengthwise, and scoop out the seeds with a small spoon. Then dice the cucumber. Dice the onion. Peel, quarter, and slice the kiwis. Peel and halve the avocado, remove the pit, halve lengthwise, and cut into thin slices crosswise. Mix the lemon juice with salt, pepper, honey, and oil to make a creamy sauce. Mix this with the salad ingredients and season to taste. Pick the leaves off the parsley and finely slice them, or chop the chives into small rolls. Mix loosely with the salad. Let it marinate in the refrigerator for about 20 minutes. Take it out 10 minutes before eating, so it’s still slightly cool.
