Knead all dough ingredients into a smooth dough, cover, and let rise in a well-oiled bowl (olive oil) in a warm place for about 1 hour, until it has doubled in size. Meanwhile, mix the topping ingredients and set aside. Place the tomato sauce ingredients in a saucepan and simmer for 15 minutes, season to taste, and set aside. Knead the pizza dough together and roll out into a rectangle. Cut out strips about 15 centimeters long and 2 centimeters wide and place them on a baking sheet lined with parchment paper. Brush thickly with olive oil and sprinkle with the topping. Let rise for another 30 minutes. Meanwhile, preheat the oven to 225 degrees Celsius. Bake the pizza sticks for 12 to 15 minutes until golden brown and serve while still hot with the lukewarm tomato sauce.
