Colorful green asparagus salad with tomatoes and feta – simple party salad

Ingredients for 3 servings:

  • 2 bunch asparagus, green
  • e.g. olive oil for frying
  • e.g. salt and pepper
  • Crema di Balsamic vinegar if required
  • possibly walnuts if required
  • 1 handful of lamb’s lettuce or arugula
  • 250 g cocktail tomatoes or other small tomatoes
  • 350 g feta cheese
  • 6 tsp Crema di Balsamic vinegar
  • 60 ml olive oil (good quality)
  • 2 tsp honey
  • 2 tsp mustard
  • 1 garlic clove(s)
  • Salt and pepper, preferably freshly ground

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

For the salad, trim the ends of the green asparagus and cut the asparagus into 1-2 cm pieces. Then sauté in olive oil for 5-10 minutes until cooked through. Season with salt and pepper. A drizzle of balsamic vinegar is also welcome. If you have it, add a few walnuts (tasty with or without). Wash the lettuce, halve the tomatoes, and dice the feta. Mix everything with the asparagus in a large bowl. For the dressing, simply mix all the ingredients together—a little more or less, if you like. Pour it over the salad and toss everything together. This is a surprisingly delicious salad that I’d like to share with you. I found it on an American cooking website. Simple and delicious.
