Asparagus and tomato salad with Parmesan

Ingredients for 2 servings:

  • 1 bunch of asparagus, green
  • 3 m.-large tomato(s)
  • e.g. Parmesan (to taste)
  • Salt
  • pepper
  • 1 dashes lemon juice
  • some butter, for frying
  • 1 pinch(s) of sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Warm asparagus and tomato salad with Parmesan

Wash the asparagus and slice diagonally. Melt the butter in a pan and add the asparagus. Season the asparagus with salt and pepper and roast with the lid on for 5-10 minutes. In the meantime, peel the tomatoes and cut them into small cubes. Let the asparagus cool slightly and toss them with the diced tomatoes. Season everything again with salt, pepper, a pinch of sugar, and a squeeze of lemon juice. Fold in the Parmesan cheese and place a small dollop on top when serving. This salad is ideal with meat and fish dishes, wonderful with grilled food, and also tastes delicious cold.
