Ingredients for 2 servings:

  • 400 g vegetables, Kaisergemüse (frozen) or any other
  • 2 medium-sized potatoes (cooked)
  • 4 eggs
  • 250 ml milk, 1.5%
  • Salt
  • pepper
  • Herbs, e.g. marjoram

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the vegetables in boiling salted water until al dente. Dice the potatoes into small cubes. Stir-fry the vegetables and potato cubes in a non-stick pan (oven-safe) and stir-fry. Whisk the eggs with the milk and herbs, season with salt and pepper, and pour the mixture over the vegetables and let it set briefly. Bake in a preheated oven at 180°C (gas mark 2) on the middle rack for about 10-15 minutes. A quick tip: The tortilla is easy to take with you and tastes great both hot and cold.
