Ingredients for 4 servings:
- 3 avocados
- 1 lemon(s)
- 1 tbsp honey
- 2 pinches of freshly grated ginger
- 5 tbsp pine nuts
- 1 bowl of strawberries
- 4 portions of salad, for garnish
- salt and pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Mix the lemon juice, honey, and ginger in a bowl and season with pepper and salt. Halve the avocado, remove the pit, halve again, and scoop it out of the skin with a spoon. Cut diagonally into pieces and add to the bowl. Roast the pine nuts in a pan without oil until golden brown. Let cool, then add to the avocados. Hull the strawberries and halve or quarter them, depending on their size. Mix with the remaining ingredients. To serve: Divide some salad among glasses and fill with the avocado and strawberry salad. Sprinkle with a few pine nuts for decoration, if desired. Enjoy!
