Strawberry and arugula salad

Ingredients for 2 servings:

  • 1 handful of arugula
  • 4 strawberries
  • some basil leaves
  • 3 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1 tsp honey, liquid
  • 1 tbsp pine nuts
  • some Parmesan, shaved
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Toast the pine nuts in a dry pan until golden brown and set aside. Place the arugula (preferably freshly picked), chopped strawberries, and torn basil leaves in a bowl. Make a vinaigrette with balsamic vinegar, olive oil, and honey and drizzle over the salad. Season with salt and pepper to taste. Top with the toasted pine nuts and grate fresh Parmesan cheese.
