Potato spirals on a skewer

Ingredients for 2 servings:

  • 4 medium-sized potatoes, waxy
  • 70 ml olive oil
  • 2 tsp sweet paprika powder
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp rosemary, dried
  • 30 g Parmesan, freshly grated
  • some cayenne pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

with a spicy Parmesan crust

Line a baking sheet with parchment paper and preheat the oven to 200°C fan/convection oven. Mix together paprika, garlic powder, cayenne pepper, rosemary, salt, and Parmesan cheese to create a seasoning mix. Scrub the potatoes (with their skins on) thoroughly with a vegetable brush and rub dry. Carefully insert a wooden skewer through each potato. Once the skewer is halfway through the potato, you can gently tap the skewer on the countertop and hold the potato in place. This requires less effort. Slide the skewered potato onto the center of the skewer, place it on a board, and use a sharp knife to cut into spirals down to the skewer. This may require a bit of practice. The thicker the slices, the longer they will take to bake. Carefully pull the spirals apart and brush them inside and out with olive oil, sprinkle with the seasoning mix, and place them on the baking sheet. Bake the potato spirals for about 15 minutes, turn them over, and bake for another 15 minutes until crispy.
