Bring the rice to a boil with 2 cups of soy milk and the sugar, then simmer for 15 minutes, stirring constantly. Remove from the heat, add an additional cup of soy milk to the pot, stir once more, cover, and let stand until ready to use. I prepare the rice pudding the night before and then eat it for breakfast. Simply add a little more milk and heat it up. Add flavors as desired (cinnamon-sugar mixture, fruit, vanilla sugar, etc., etc., etc.).
