Ingredients for 1 servings:

  • ½ cup rice, risotto rice (nice creamy rice!)
  • 2 cups soy milk (soy drink) (natural or vanilla)
  • 4 tbsp cane sugar
  • 1 cup soy milk (soy drink)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Suitable for SiS, can also be prepared the evening before

Bring the rice to a boil with 2 cups of soy milk and the sugar, then simmer for 15 minutes, stirring constantly. Remove from the heat, add an additional cup of soy milk to the pot, stir once more, cover, and let stand until ready to use. I prepare the rice pudding the night before and then eat it for breakfast. Simply add a little more milk and heat it up. Add flavors as desired (cinnamon-sugar mixture, fruit, vanilla sugar, etc., etc., etc.).
