Ingredients for 4 servings:
- 150 g arugula, cleaned
- 50 g Parmesan
- 250 g flour
- 1 packet of baking powder
- 500 ml buttermilk
- 2 eggs
- 50 g smoked ham, finely chopped
- 1 pinch of nutmeg
- 1 tbsp rapeseed oil for the waffle iron
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes
Wash and chop the arugula, and let it melt in a pan over medium heat. Mix a batter of flour, baking powder, buttermilk, eggs, grated Parmesan cheese, salt, pepper, and nutmeg. Stir in the arugula and ham. Grease a waffle iron with rapeseed oil and bake 8 waffles until golden brown.
