Ingredients for 1 servings:

  • 125 g fat (pork fat), finely diced
  • 125 g bacon, fat, smoked, in fine cubes
  • 125 g bacon, streaky, smoked, finely diced
  • 1 apple (Boskoop), peeled, pitted, finely diced
  • 2 medium-sized onions, finely diced
  • ½ tsp marjoram, dried
  • ½ tsp black peppercorns, crushed in a mortar

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Fry all the flaked pork and bacon cubes in a saucepan over low heat until translucent. Remove the cracklings and fry them in a pan until crispy and brown. Stir in the apple and onion cubes in the hot fat. Remove the pan from the heat when the onions are browned. Stir in the browned cracklings, marjoram, and pepper. Pour the hot lard into a suitable ceramic pot and let it cool. Serve with fresh bread and, if desired, sea salt.
