Ingredients for 4 servings:
- 1 kg potatoes
- 1 shallot(s) or spring onions
- 2 peppers, green
- salt and pepper
- e.g. fresh parsley, chopped
- chili powder
- n. B. Oil, neutral
Instructions
Working time approx. 25 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 45 minutes
no frills
Boil the potatoes and let them cool, then peel and cut them into small pieces. Finely chop the shallot or spring onions (you can also use both) and green peppers and mix them into the potatoes. Season well with salt, pepper, chili, and fresh parsley. Add oil as desired to round things off and let it simmer for at least 1 hour.
