Zucchini boats and stuffed tomatoes

Ingredients for 2 servings:

  • 2 zucchinis
  • 2 large tomatoes
  • ½ bag of mozzarella, grated
  • ½ bag of cheese (hard cheese) Italian
  • ½ tsp oregano, dried
  • ½ tsp basil
  • 1 tsp chives
  • 1 tsp parsley
  • 1 tsp salt
  • 1 pinch(s) of pepper
  • 1 clove(s) garlic
  • 100 g bacon, diced

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes

very tasty with bacon, but can also be made without (vegetarian)

Halve the zucchini lengthwise, scoop out the insides with a small spoon, leaving a small edge at the bottom and on the sides. Place the insides in a bowl. Cut a lid off the tomatoes, scoop them out as well, and add them. Add the mozzarella, garlic, and, if desired, bacon to the zucchini mixture and puree with a hand blender until not too fine. Stir in the spices and fill the mixture into the zucchini boats and tomatoes. Place the mixture in a baking dish and bake at 200 degrees Celsius for about 20 minutes (the temperature/cooking time may vary depending on the oven). Then sprinkle the roughly chopped hard cheese over the boats and tomatoes and bake again until browned.
