Pepper jam with white wine

Ingredients for 1 servings:

  • 1 ¼ kg bell pepper(s), red, very ripe, cleaned
  • 200 ml white wine
  • ½ tsp chili flakes
  • 1 tsp, sautéed lemon thyme, fresh and finely chopped
  • 1 kg gelling sugar, 1:1

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 20 minutes

Cut the bell peppers into small cubes and cook with the white wine for about 25 minutes. Chop them slightly with a hand blender in a saucepan and pass them through a sieve. (I don’t like any skin residue.) Now add the remaining 1 kg of white wine, add the lemon thyme and chili flakes, and finish cooking according to the instructions for the preserving sugar. While still hot, pour into twist-off jars.
