Harzer Handkäse salad with Asian

Ingredients for 2 servings:

  • 200 g Harzer cheese
  • 200 g konjac rice or konjac noodles
  • 200 g cucumber(s)
  • 100 g bell pepper(s), red
  • 1 spring onion(s)
  • 1 clove(s) garlic
  • 2 red chili peppers
  • 2 tbsp fish sauce
  • 1 tbsp lemon juice
  • 1 tbsp sugar
  • 1 handful of coriander leaves

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 28 minutes

Cut the Harzer cheese, cucumber, and bell pepper into small pieces. Crush the garlic. Finely chop the chili and spring onions and place everything in a bowl. Rinse the konjac rice in a sieve with cold water and let it drain. Place it in a microwave-safe bowl and stir in 1 tablespoon of fish sauce. Microwave for about 3 minutes at 800 watts, draining the water halfway through. Now add the konjac rice to the bowl with the cheese and vegetables and mix everything together. Season with lemon juice, fish sauce, and sugar and let it stand for 10 minutes. Serve sprinkled with coriander.
