Chicory vegetables with bacon cubes

Ingredients for 4 servings:

  • 800 g chicory
  • 2 small onions
  • 200g bacon
  • little oil
  • 1 tsp sugar
  • 100 ml vegetable stock
  • 100 ml cream
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Remove the bitter stalk from the chicory, chop it finely, wash it, and drain. Dice the onion and bacon and sauté in a little oil. Now add 1 teaspoon of sugar and let it caramelize slightly. Add the chicory directly to the pot and stir. Pour in the vegetable stock and simmer for 15 minutes. Add the cream and simmer for another 5 minutes. Finally, season with salt, pepper, and nutmeg.
