Ingredients for 4 servings:
- 150 g lamb’s lettuce
- ½ can corn
- 100 g feta cheese
- 200 g cocktail tomatoes
- ½ jar green olives, pitted
- 100 ml sunflower oil
- 75 g natural yogurt
- 1 tbsp mustard, hot
- 1 tbsp honey (forest honey)
- 1 clove(s) garlic
- Sea salt, coarse
- Pepper, black from the mill
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Lamb’s lettuce with fresh cocktail tomatoes, feta cheese, corn and green olives
Wash the lettuce and drain well. Quarter the tomatoes, removing the stems if desired. Dice the feta cheese. Halve the pitted olives and drain them along with the corn. Now place the lettuce, tomatoes, feta cheese, olives, and corn in a large bowl. For the dressing, place the remaining ingredients in a blender (or use an immersion blender) and blend thoroughly. Pour the dressing into the bowl and mix everything well.
