"Tropical tomato soup" with mango and ginger

Ingredients for 2 servings:

  • 500 g tomatoes
  • 1 onion(s)
  • 1 piece(s) ginger root, 2 cm
  • 1 tbsp oil
  • 2 tsp curry powder
  • 1 pinch of turmeric
  • 100 ml vegetable stock
  • 1 mango(s)
  • 1 lime(s)
  • 2 tsp tropical jam
  • salt and pepper
  • 50 g ham (salmon)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Dice the onion and ginger and sauté. Add the diced tomatoes and vegetable stock. Mix in the spices and simmer for 10 minutes. Finely dice the mango and add half to the soup, then puree everything. Add a little more stock if necessary. Grate a little lime zest into the soup. Squeeze the lime. Season the soup with a little lime juice, tropical fruit jam, and salt and pepper to taste. Cut the salmon ham into strips. Serve the soup with the remaining mango cubes and ham strips.
