Red cabbage salad with feta cheese

Ingredients for 5 servings:

  • 1 small red cabbage (approx. 700g)
  • 1 orange(s), the juice
  • 50 ml olive oil
  • 1 garlic clove(s)
  • 1 tbsp parsley
  • 1 tbsp chives
  • 2 tsp vinegar (apple cider vinegar)
  • 1 m.-sized onion(s)
  • 200 g sheep’s cheese
  • 1 carrot(s)
  • 1 tbsp honey
  • ½ lemon(s), the juice
  • Salt and pepper, to taste

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Make a dressing with the orange juice, olive oil, garlic, parsley, chives, apple cider vinegar, honey, salt, and pepper and let it sit. Finely slice the red cabbage and knead it well with your hands. Peel and grate the carrot and add it to the red cabbage. Peel and dice the onion and add it to the red cabbage along with the diced feta cheese. Now add the dressing and mix everything well. Season with lemon juice, salt, and pepper. Let it sit for at least 1 hour! Tip: If you like, you can also add a grated apple.
