Ingredients for 4 servings:
- 1 kg carrot(s), finely grated
- 2 garlic cloves
- 2 small chili peppers or some chili threads (e.g. from spirit-of-spice)
- some salt and pepper
- n. B. Olive oil (preferably nutty tasting
- herbs of your choice if required
- possibly cashew nuts, chopped, if required
- cane sugar
- e.g. vinegar, milder
- possibly water
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Peel the carrots, finely grate them, and place them in a bowl. Peel the garlic and add it finely crushed. Finely slice the chili peppers and add it. Mix everything together. Make a salad dressing from the oil, vinegar, and a little water if desired, and season with salt, pepper, and cane sugar. Depending on your taste, you can add herbs (e.g., flat-leaf parsley, chives) and/or chopped cashews. Let everything marinate well and serve. The salad tastes delicious the next day, even if you have any leftovers.
