Sauerkraut salad

Ingredients for 4 servings:

  • 800 g sauerkraut, fresh
  • 500 g apples, sour
  • 200 g gherkins
  • 1 tbsp parsley, chopped
  • 1 tbsp chives, cut into fine rolls
  • 1 tsp basil, finely chopped
  • 1 tbsp mixed herbs (frozen, 7-herb)
  • 1 tbsp sugar
  • 2 tsp salt
  • 4 tbsp lemon juice
  • ⅛ liter of oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the sauerkraut into short pieces. Wash, core, and dice the apples. Drain and dice the gherkins. Place everything in a bowl. Mix the herbs with salt, sugar, and lemon juice. Add to the sauerkraut and fold in. Heat the oil, pour over the salad (it should sizzle), and mix all ingredients again. Season to taste and let it marinate well. Tip: Garnish with cherry tomatoes and sprigs of parsley. Note: The hot oil makes the salad milder and more digestible.
