Sauerkraut salad

Ingredients for 4 servings:

  • 1 m.-sized onion(s)
  • 5 m.-large gherkins
  • 2 large tomatoes
  • 400 g jacket potatoes, waxy
  • 500 g sauerkraut, raw from the bag or jar
  • 1 tsp oil
  • n. B. Pepper, ground
  • possibly salt
  • some cucumber juice

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 25 minutes; Total time approx. 2 hours 45 minutes

ideal salad for grilling

Boil potatoes, peel, and dice. Dice tomatoes, cucumbers, and onions. Loosen the sauerkraut and chop it slightly with a knife. Mix all ingredients in a bowl with freshly ground black pepper and, if desired, a little salt and cucumber juice. Let the salad sit for 1-2 hours before serving. It tastes perfect with grilled meat or sausages, but it’s also a light salad and good for a slim figure and vegetarians.
