Ingredients for 3 servings:

  • 500 g potatoes
  • 500 g zucchini
  • 2 m.-sized onion(s)
  • Olive oil, for frying
  • Sea salt, good
  • pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel the raw potatoes, slice them, and fry them in olive oil. Stir occasionally. Meanwhile, quarter the zucchini lengthwise, slice them crosswise, add them, and season with salt and pepper. Stir occasionally. Then add plenty of onion rings. These, too, are fried for about 10 minutes. Finally, cover the pot and simmer everything for about another 10 minutes over low heat, until the potatoes are tender. If you like, you can also add a few cubes of bacon. This simple vegetable dish goes well with meatballs, steaks, or raw ham.
