Cauliflower leaves vegetables

Ingredients for 2 servings:

  • 1 cauliflower, organic, including the leaves and stems
  • 4 tbsp olive oil
  • 100 ml water
  • 1 sprig(s) of thyme
  • Salt
  • 50 g Pecorino, grated

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Using leftover cauliflower stalks and leaves

Cut off the outer leaves of an organic cauliflower and wash thoroughly. Separate the green parts from the stems. Cut the stems into approximately 1 cm wide strips and tear the green parts. Use the florets for something else. Heat the olive oil in a saucepan and briefly sauté the stems. Add the leaves and pour in the water. Add the small thyme leaves with a pinch of salt. Cover the pan and let the cauliflower simmer for about 15 minutes. Drain any water left in the pan. Stir in the pecorino and serve the vegetables immediately.
