Healthy vegetables, delicate and tasty for in between meals or as a starter

Break the celery stalks off the bunch and trim off about 3 cm of the ends. Wash the stalks thoroughly and then peel off the tough, rounded ends with a vegetable peeler. Bring a little water to a boil, then add the stock and let the stalks steep for 5 minutes. Drain the stalks, reserving the stock. Lightly butter an ovenproof dish, add the celery, and season. Sprinkle the cheese over the stalks and microwave or bake for 8-10 minutes. When the cheese has melted, the meal is ready. Don’t let the cheese brown! Add a sprig of parsley when serving. Serve with a crusty piece of baguette, browned buttered toast, or floury boiled potatoes. The stock will absorb the full flavor of the celery and tastes delicious served warm! There are also variations: add a few slices of tomatoes and/or strips of cooked ham under the cheese and/or add a few julienne-thick slices of onion on top of the cheese
