Zucchini salad with nuts

Ingredients for 2 servings:

  • 1 zucchini
  • 2 handfuls of nuts
  • 2 tbsp sunflower oil
  • 3 tbsp balsamic vinegar, lighter
  • 5 tbsp water
  • 1 tbsp seasoning mix (salad fine)
  • 1 pinch(s) of cayenne pepper

Instructions

Working time approx. 5 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 5 minutes

Wash the zucchini and cut into small cubes. Place it in a bowl with the nuts. Combine the sunflower oil, balsamic vinegar, water, and salad dressing in a shaker and shake well. Pour the dressing over the zucchini and nuts. Let it sit in the refrigerator for 1 hour or overnight. Serve and sprinkle a pinch of cayenne pepper over the salad.
