Ingredients for 2 servings:
- 150 g leaf lettuce(s), frisée, arugula, red chard, Lollo Rosso, romaine, mixed
- 1 nectarine(s) or peach
- 75 g cream cheese, grainy
- 4 cocktail tomatoes
- 1 pomegranate
- ½ lemon(s)
- 4 tbsp olive oil
- 2 tsp honey
- 1 tsp mustard, sweet
- 1 pinch(s) of salt and pepper
- 2 sprigs rosemary
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Wash the lettuce and tear into bite-sized pieces. Wash the nectarine or peach, halve it, remove the stones, and cut it into thin wedges. Arrange the slices on the salad. Spread the cream cheese on the salad with a teaspoon. Slice the cocktail tomatoes and garnish the salad. Remove the pomegranate seeds from their skins and scatter them over the salad. For the dressing, pluck the rosemary from the stem and squeeze half a lemon. In a small bowl, mix half the lemon juice with the olive oil, honey, sweet mustard, salt, pepper, and rosemary. Season to taste and refine with more lemon juice if desired. Drizzle the dressing over the salad. Serve with baguette.
