Ingredients for 8 servings:
- 1 ½ kg onion(s), white, small
- 15 garlic cloves
- 200 g sugar
- 700 ml wine, red, dry
- 250 ml vinegar (red wine vinegar)
- 4 sprigs rosemary
- 3 bay leaves
Instructions

Peel the onions and garlic, melt the sugar in a saucepan over medium heat until golden brown, toss the onions in the sugar, deglaze with red wine and red wine vinegar, add the herbs, and then add the garlic. Simmer over low heat in a covered pan for 30 minutes, then cool. Transfer the onions and the liquid to a large container and let it steep for 2-3 days.
