Ingredients for 6 servings:

  • 250 g tofu (silken)
  • 170 g sugar
  • 130 g peanut butter, creamy
  • 180 ml water
  • 230 g chocolate, vegan, dark, melted
  • 1 vanilla pod(s), scraped pulp
  • possibly cream (soy), whipped
  • possibly chocolate, shavings

Instructions

Working time approx. 5 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 15 minutes

rich, creamy and vegan pudding

Bring the sugar and water to a boil in a small saucepan and simmer, stirring occasionally, until the sugar has completely dissolved. Remove from the heat and let cool. Combine all ingredients except the soy cream and chocolate shavings in a blender and blend until smooth. Divide among six dessert bowls and chill in the refrigerator for at least one hour. Serve garnished with the cream and chocolate shavings, if desired.
