Cucumber and mozzarella carpaccio with tomato and parsley tartar

Ingredients for 2 servings:

  • ½ cucumber(s)
  • 1 ball of mozzarella
  • 1 large tomato(s)
  • 1 tbsp fresh parsley, chopped
  • e.g. salt and pepper
  • 2 tbsp vinegar
  • 2 tbsp oil
  • 1 pinch(s) of sugar
  • some water
  • e.g. salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash and finely grate the cucumber. Finely slice the mozzarella (into smaller pieces). Wash the tomatoes, remove the stems, and finely dice. Mix the dressing together and season to taste. Alternate the cucumber and mozzarella in a fan-like pattern on platters or plates and season with salt and pepper as desired. Place the tomatoes in the center of the plates and sprinkle with parsley. Pour the dressing over the top.
