Shopska – Salad from Bulgaria

Ingredients for 4 servings:

  • 500 g tomatoes
  • 500 g cucumber(s)
  • 300 g bell pepper(s) (red/green/yellow)
  • 4 onions
  • 4 tbsp oil
  • 1 Pepper
  • Salt
  • pepper
  • Vinegar
  • Garlic salt
  • 200 g cheese (grated shipka cheese or hard sheep’s cheese)
  • Parsley, chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the tomatoes and cucumbers into 2cm cubes, finely chop the peppers and parsley, finely chop the onions, mix with all the other ingredients, and season to taste. Grate or shred the cheese over the top.
