Tomato tortellini salad

Ingredients for 4 servings:

  • 2 cloves garlic
  • 2 tbsp balsamic vinegar
  • 1 pinch(s) of sugar
  • 1 pinch of salt
  • 1 pinch(s) of pepper
  • 5 tbsp olive oil
  • 200 g cherry tomatoes
  • 125 g mini mozzarella
  • 1 bunch of basil
  • 350 g tortellini with ricotta and spinach filling

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

Vegetarian

Peel and press the garlic. Mix with vinegar, a pinch of sugar, salt, and pepper. Gradually add the olive oil and mix. Wash and halve the tomatoes and add them to the dressing along with the mozzarella balls. Roughly chop the basil and add it to the bowl. Cook the tortellini according to the package instructions, rinse with cold water, and add it to the bowl. Mix all ingredients.
