Ingredients for 1 servings:
- 2 eggs, size M
- 115 ml water, boiling
- 1 tsp mild mustard
- 20 g butter or margarine, melted
- 120 g almond flour, defatted (not ground almonds!)
- 1 tbsp, leveled psyllium husk flour
- 2 tsp, leveled baking powder
- 1 pinch of salt

Great for hot dogs or baguettes
Line a baking sheet with baking paper and preheat the oven to 200°C (top/bottom heat), or 180°C (fan oven). Beat the eggs and water until frothy. Add the mustard and melted butter, stirring constantly, and mix everything into a smooth batter. In another bowl, mix the almond flour with the psyllium husk flour, baking powder, and a pinch of salt, then gradually add to the egg mixture. Mix everything well. Immediately form 2-4 oblong rolls from the resulting dough and place them on the baking sheet. Score the rolls lengthwise with a knife for a decorative finish, then let them rest for about 20 minutes. Then place them on the middle rack of the preheated oven and bake for about 20 minutes. The rolls are ready when they are nice and crispy on the outside and lightly browned. Depending on the size, number, and shape of the rolls you are making, this may take a little more or less than 20 minutes. The rolls are firm and crispy, more like baguette rolls than the classic hot dog buns. Their shape, color, and fairly neutral flavor make them perfect for hot dog buns. They also taste delicious as healthy, low-carb baguettes with salad, sauce, and your choice of toppings. If desired, herbs can be mixed into the dough, or the rolls can be sprinkled with seeds or a little cheese before baking.
