Fried smelt

Ingredients for 2 servings:

  • 200 g fish(s) (fresh smelt)
  • 2 tbsp, heaped rye flour
  • ½ lemon(s), juice
  • 1 tbsp mayonnaise
  • ¼ tsp salted lemon(s)
  • Salt
  • olive oil
  • Peanut oil

Instructions

Working time approx. 20 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes

Smelt are small fish that come from the mouth of the Elbe River and can be found at northern German markets in winter and spring. Don’t worry about the bones.

Gut the fresh smelt and wash thoroughly. Then refresh with lemon juice and let it marinate for 20 minutes. In the meantime, mix the finely chopped pickled lemon with the mayonnaise. Lightly salt the fish and coat in rye flour. Shake off excess flour and fry the smelt in a mixture of olive oil and peanut oil for 2-3 minutes per side. Enjoy with the mayonnaise.
