Sweet and sour carrot salad

Ingredients for 2 servings:

  • 200 g carrot(s)
  • 1 piece(s) ginger, small
  • 1 garlic clove(s)
  • 1 bunch of spring onions
  • Soy sauce
  • 2 tbsp lemon juice
  • ½ mango(s)
  • Sugar
  • 1 tbsp sesame seeds
  • 1 tbsp oil (sesame oil)
  • oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the carrots and slice them thinly. Caramelize them in a little oil with sugar (swirl them in a pan over medium heat until the carrots turn a light brown), then transfer them to a bowl. Peel the mango and slice it finely. Peel the spring onions and slice the white part into thin rings. Peel the ginger and slice it thinly. Mix all ingredients together and season with soy sauce, sesame oil, pepper, salt, and lemon juice. Toast the sesame seeds in a little oil until golden brown. Serve the salad well chilled, sprinkled with sesame seeds.
