Potato curry

Ingredients for 4 servings:

  • 1 kg potato(s) (small, waxy)
  • 5 tbsp oil
  • 1 tsp turmeric
  • ½ tsp cumin, whole
  • ½ tsp chili powder
  • 1 tsp spice mix (garam masala)
  • Salt
  • some coriander leaves

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Bombay Aloo

Boil the potatoes in their skins until just tender. Let them cool, peel them, and cut them into bite-sized pieces. Heat the oil in a frying pan and fry the potatoes until golden brown. Add the spices and chopped coriander. Mix everything well and season lightly with salt. Serve hot. If you like it spicier, you can double the spices.
