Carrot soup with ginger

Ingredients for 1 servings:

  • 300 g carrot(s)
  • 250 ml vegetable stock
  • 1 small onion(s)
  • 1 piece(s) ginger, freshly grated
  • salt and pepper
  • Parsley, finely chopped
  • Paprika powder, hot or chili powder

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Dice the onion and cook it gently in a fat-free saucepan. Dice the carrots and add them to the onions. Deglaze the soup with the vegetable stock and simmer for about 20-30 minutes. When the carrots are tender, remove the soup from the heat and puree. Add the ginger to the soup. Season with salt, pepper, and paprika or chili. Finally, sprinkle with parsley and serve.
