Cauliflower and potato soup

Ingredients for 2 servings:

  • 300 g potatoes
  • 300 g cauliflower
  • e.g. vegetable broth
  • Salt and pepper, white
  • nutmeg
  • Parsley
  • 4 Vienna sausages or diced ham

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

with or without sausages – quick and easy to make

Peel and dice the potatoes. Cut the cauliflower into florets. Place both in a large pot and just cover with water. Bring to a boil, add the vegetable stock, and simmer gently for about 15 minutes, until the vegetables are tender. Purée coarsely or finely, depending on your taste, and season with spices. If you like, you can add sliced ​​sausages or diced ham to the soup.
