Potato soup, grandma's style

Ingredients for 4 servings:

  • 1 tbsp oil
  • 40 g bacon, fat, diced
  • 375 g potatoes, weight after peeling, cut into small pieces
  • 1 bunch of soup greens, chopped
  • 1,250 ml water or broth, hot
  • 1 tbsp leaf parsley, chopped
  • Salt and pepper, black, from the mill

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Heat the oil in a large pot, fry the bacon cubes over medium heat, and then remove them. Pour in the water or broth, add the potatoes and vegetables, bring to a boil, and simmer, covered, over low heat for about 20 minutes. Then mash the potatoes with a potato masher and pass the soup through a fine sieve or puree it with a hand blender. Add the parsley and season the soup with salt and pepper. As a garnish, either heat the bockwurst sausages in the soup or serve finely chopped pork sausage on the side.
