Mushroom goulash

Ingredients for 4 servings:

  • 600 g mushrooms, fresh
  • 2 onions, chopped
  • 2 garlic cloves, finely chopped
  • 1 bunch of parsley
  • 1 bunch of chives
  • 1 tbsp oil
  • 2 tbsp butter, cold
  • salt and pepper
  • 1 tsp tomato paste
  • 1 tbsp paprika powder
  • 250 ml vegetable broth made from granulated broth
  • ½ cup whipped cream
  • 1 dashes lemon juice

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Add the onions, butter, and garlic to a large pan with the oil and sauté until translucent. Add the roughly chopped mushrooms and season with salt. Cover and simmer for 5 minutes. Add the tomato paste, season with salt, pepper, and paprika, and pour in the broth. Add the chopped chives and parsley. Simmer uncovered for 15 minutes over low heat. Stir in the cream. Serve with bread dumplings or spaetzle.
