Zucchini – smoked salmon – rolls

Ingredients for 6 servings:

  • 400 g smoked salmon
  • 1 ½ bunch of spring onions
  • 2 large apples, sour
  • 2 tbsp lemon juice
  • 1 tsp mustard and honey
  • salt and pepper
  • 2 small zucchini
  • oil
  • chives

Instructions

Cut the smoked salmon into small cubes. Trim and wash the spring onions and slice them into thin rings. Peel and core the apples, cut them into small cubes, and drizzle with lemon juice. Gently mix the salmon, onions, and apples, season with mustard, honey, salt, and pepper, and let stand for 30 minutes. Trim and wash the zucchini, and cut them lengthwise into thin slices. Heat oil in a pan. Briefly fry the zucchini slices on both sides, season with salt and pepper. Let cool slightly. Roll the salmon mixture into the zucchini slices in portions. It looks nice if you tie the rolls with chives.
