Ingredients for 6 servings:

  • 2 packs of pumpernickel coins
  • butter
  • 2 bunches of chives
  • 3 cans of fish, Swedish snacks (pickled herring or matjes fillet pieces)
  • 2 onions, depending on size
  • Peppercorns, green, in brine
  • Pepper, black from the mill

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the chives into fine rolls. Brush the pumpernickel slices with butter. Press the buttered side of each slice into the chive rolls. Drain the Swedish Bites well and arrange the chives on the buttered side of the slices. Cut the onions into fine rings. Garnish each bite with 2 to 3 onion rings and a few drained peppercorns. Finally, sprinkle with freshly ground black pepper. These Swedish Bites are called that because my friend, who likes to eat them at my place, said they looked like “frog eyes”—from then on, they got their name. You can, of course, also cut small bites from square pumpernickel and serve them rectangularly; but then they are no longer “frog eyes.”
