Greek farmer's salad

Ingredients for 4 servings:

  • 1 cucumber(s)
  • ½ bell pepper(s), green
  • ½ bell pepper(s), yellow
  • 500 g tomatoes
  • 1 onion(s), red
  • 200 g feta cheese
  • 100 g olives, pitted black
  • 1 pinch of salt
  • 3 tbsp vinegar (red wine vinegar)
  • 5 tbsp olive oil
  • pepper, black
  • 1 tsp oregano, chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Healthy and delicious

Peel the cucumber, halve it horizontally, and scoop out the seeds, then cut the flesh into 1 cm thick half-moons. Deseed the pepper halves, wash them, and cut them into strips. Wash the tomatoes and cut them into eighths. Peel the onion and slice them into rings. Crumble the cheese with your fingers. Mix the vegetables, cheese, and olives in a bowl. Stir the salt into the vinegar. Once dissolved, whisk in the oil with a fork until the dressing is creamy. Season and stir in the oregano. Pour the dressing over the salad ingredients. Let it sit in the refrigerator for 30 minutes. This goes wonderfully with crusty white bread! 🙂
