- 1 kg roast beef
- salt and pepper
- Clarified butter

with low-temperature cooking method
Preheat the oven to 100°C. Season the roast beef all over with salt and pepper and brown briefly on all sides in a pan with clarified butter. Then transfer it to a roasting pan, place it in the oven, and immediately reduce the oven temperature to 80°C. Insert a meat thermometer into the center of the piece of meat. The meat is medium when it reaches 56°C in the center for 5 minutes! This takes about 4 hours for 1 kg. The roast beef tastes great both hot and cold, sliced very thinly.
