Ingredients for 4 servings:
- 250 g flour
- 1 tsp dry yeast
- 4 tbsp sugar
- ¼ liter buttermilk
- 6 eggs
- 400 g berries of your choice (e.g. currants)
- oil
- powdered sugar
Instructions
Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes
Mix the first five ingredients into a creamy batter and let it rest for about half an hour. Then fold in the washed berries. Heat a little oil in a pan and cook the batter into eight large pancakes or several small ones until golden brown on both sides. Dust with powdered sugar and serve with homemade vanilla sauce!
